By far one of the best variations of a negroni by one of Chicago’s best bars, Longman & Eagle. Negroni’s are very bitter, thanks to Campari. This drink contains Aperol in place of Campari, which being less bitter and slightly orangey (yes, I just used this as a word), appeals more to the masses. Add in the sweet vermouth and top with prosecco, and you’ve got yourself a damn good brunch cocktail!
- 1 oz Aperol
- 1 oz Sweet Vermouth
- Top with Prosecco
- Garnish: Orange Peel
- In a glass filled with ice, combine Aperol and sweet vermouth. Top with prosecco, and stir.
- Using a paring knife or y-peeler, pare off an orange peel. Express the essential oils from the skin of the orange over the drink and drop in the orange peel.
